Roasted Broccoli


1 ¼ lbs fresh Broccoli Florets (about 8 cups)

3 ½ Tbsp Olive Oil

4 cloves Garlic, minced

¼ tsp crushed Red Pepper Flakes

Salt and fresh ground Pepper to taste

grated Parmesan cheese (optional)

Preheat oven 450°. Combine broccoli and 3 tablespoons olive oil in a resealable plastic baggie and toss to coat. Transfer broccoli to a baking sheet and roast for 15 minutes. Remove from oven and set aside. Combine remaining olive oil, garlic and pepper flakes in a small bowl and drizzle mixture over broccoli, tossing to coat. Return broccoli to oven and roast until florets begin to brown, about 6-8 minutes. Season with salt and pepper and serve immediately with a sprinkling of Parmesan is desired.
